The rose was a medieval symbol of flawless perfection.
Both songs are based upon a quotation from the Bible from Isaiah.
And there shall come forth a rod out of the stem of Jesse and a branch shall grow out of its roots.
The first song is English, 15th century.
But I've interpreted this song in a kind of Middle Eastern way for a number of reasons.
One, the whole Christian story comes from the Middle East.
As does a lot of English music.
